I have the OR ColdFire 5mm boots and I kite all winter in them with no problem, including trudging through snow to get to the water. I think the 2010 version is a 7mm. These are the best boots I have ever worn.

I have some 5mil booties now,

I have some 5mil booties now, but I grabbed some 7mil for the winter last year and they were great. Never got cold. Will switch over in Dec i bet... depends on the weather.

I need some new gloves this season. the ones I have now let wind in on the tops of my fingers cause they are neoprene... not much, but enough that I feel it when it's windy. I'm getting some gloves that are all rubber and do not breathe this season. My hands have always been the first thing to get cold.

When it's super cold, my hands get to a point that the hurt like hell... like they were stung by 100 bees. I found that once you get over this pain (only lasts 5 minutes or so), my body pumps extra blood to them and they never really get cold again. So it sucks, but last year I would pump up, suit up, then right before I'd kite, I'd stick them straight into the cold water for a minute. My body would start pumping blood to them, and then they'd stay warm. I guess it was like a controlled way to prepare my body for the cold. But I swear it worked.

That all being said, I was cold in an old 4/3 for the past few years, but I bought a full hood last year that has a rashguard attached that went under my wetsuit. having a full hood was a lifesaver and made a 1000% difference.
